Fig, Prosciutto, Goat Cheese Pizza with Balsamic Reduction



 I have no words for this pizza. It's heaven in your mouth. 
I apologize for the lack of pictures, we were just too excited to eat this beauty.

Living in the PNW there are no lack of fresh figs here and the figs are what really make this pizza special. This pizza is easy and loaded with flavor and you'll be savoring every last bite. 

Ingredients:
1lb prepared pizza dough, room temperature, (you can make your own or buy pre-made dough, I got ours from Trader Joes)
1 small yellow onion chopped
6 large mushrooms chopped
6 leaves swiss chard washed 
4-6 fresh figs cut into rounds
5 ounces goat cheese
8 thin slices prosciutto
4 garlic gloves chopped
1 teaspoon fresh chopped rosemary
olive oil
cornmeal

Balsamic Reduction: 
1 cup balsamic vinegar
1 tablespoon brown sugar
  1. In a small saucepan, combine vinegar and sugar. Bring to a boil. Reduce heat to medium-low, stirring occasionally and simmer 20-30 minutes. Remove from heat and let sauce thicken as it cools.

Directions:
  1.  Saute onions in pan with oil till a caramel color, set aside to cool completely. Preheat oven to 450 degrees. Roll out dough onto cornmeal surface to 1 inch thick. Place on a pan that is dusted with corn meal or use a pizza stone that has been preheated if you have one. Spread a thin coat of olive oil on dough. Arrange swiss chard as the base, then the prosciutto, then the rest of the toppings. Place in oven and bake for 15-20 minutes. Drizzle reduction over cooked pizza and enjoy!
